bon appetit’s chocolate (mayonnaise) cake

My pumpkin supply is running short here in Asia, but that’s OK because I was forced to try something different this fall.  I’d completely forgotten how amazing the perfect chocolate cake can be!  I’ve never had a go-to recipe, but when I saw this in Bon Appetit it looked like I had met my match.  I don’t go for light and fluffy when it comes to my cakes, particularly the chocolate variety.  I like dense (check), rich (check) and moist (check).  The cake was fab. And the frosting?  Beyond.  Dangerous.  Anytime I need a chocolate cake, this will be on the menu.  Seriously, didn’t even miss my pumpkin in the middle of October, that’s how good it was!

I know, I know, I just posted a pumpkin dessert.  As much as I enjoyed trying that new cake, this is one recipe I have to make every year.  It is reminiscent of pumpkin pie, and, although simple, this is hands down my favorite treat for fall!  Simply delicious.

homemade oatmeal cream pies

Major computer issues last week, MAJOR.  Back up your files!! I’ve shed a few tears, not gonna lie.

But these knock-off cream pies didn’t make me cry.  Well, maybe some tears of joy.  Ain’t nothin’ like the real thing?  Guess what, these were EXACTLY like the real thing.  No, they were better…honest to goodness.   Oh, and bonus, you can manipulate the filling to cookie ratio to suit your own taste.  (Can you tell?)  Took me right back to lunch box days in elementary school.  Happy, happy times.  I wonder if there’s a comparable Star Crunch knock-off…?  Continue reading ‘homemade oatmeal cream pies’
