harvest squares

I know, I know, I just posted a pumpkin dessert.  As much as I enjoyed trying that new cake, this is one recipe I have to make every year.  It is reminiscent of pumpkin pie, and, although simple, this is hands down my favorite treat for fall!  Simply delicious.

Yields 15 servings

(Calorie estimate: 350/square)

First Layer:

1 spice cake mix, reserve one cup for topping

1/2 cup butter, melted

1 egg

Mix cake mix (minus the 1 cup) with melted butter and egg. Spread in 9 x 13 inch pan.

Second Layer:

2 1/2 cups pumpkin or squash

2/3 cup milk

1/2 cup brown sugar

2 eggs

1/3 cup white sugar

1 1/2 teaspoon cinnamon

1/2 teaspoon allspice

1/2 teaspoon nutmeg

Combine all ingredients, mix well. Spread over bottom layer.

Third Layer:

1 cup reserved cake mix

1/2 cup sugar

2/3 cup nuts

1 teaspoon cinnamon

1/4 cup melted butter

Mix together and sprinkle on top of other two layers. Bake at 350 for 50 – 60 minutes. Good plain or served with whipped cream or ice cream.

    Yum! Im so much more of someone that has creativity cooking rather than baking. I loooove Autumn baking though, cant wait to try this!
