peanut butter pretzel bites

Salty and sweet.  Crunchy and melt-in-your-mouth.   Peanut butter and chocolate.  Dangerous and delicious (you know what I mean).  One little bite, so much to experience.  Why did I wait so long to give these a try??  A perfect treat to share with a large group of people that you love a whole lot, or to share with yourself on a self-indulgent sweats and sofa  sorta day.  Yum and yum. 

Peanut Butter Pretzel Bites

Calorie estimate: 4,000 – 5,000 for complete recipe (depending upon dipping chocolate and pretzels used, etc.)

Yield 60 – 80 pretzel bites

Ingredients

1 cup creamy peanut butter

2 tbsp softened butter

1/2 cup powdered sugar (maybe more)

3/4 cup brown sugar (maybe more)

Pretzels

1 bag  semi-sweet chocolate chips

Directions

Combine peanut butter and softened butter in a large bowl with a fork or whisk, or in a stand mixer.  Add the sugars and mix to combine.  At this point if the filling will roll easily into balls without sticking to your hands you’re ready to go.  If not, add a little more of each sugar until you reach a consistency that is easy to roll (I used about 3/4 cup of each sugar).

Use a teaspoon measure to scoop the filling.  Roll each portion into a small ball, then sandwich them between two whole pretzels.  When all the balls are rolled and successfully sandwiched, stick the whole tray in the freezer for about half an hour.

Pour the chocolate chips into a microwave safe bowl and heat at 30-second intervals, stirring occasionally until completely melted.  Remove the pretzel sandwiches from the freezer and quickly dip each half-way into the melted chocolate.  Return to the tray and repeat with remaining sandwiches.  When all are dipped, return the tray to the freezer to set up completely.  Store the sandwiches in the refrigerator until serving time.

      Actually, a more reasonable estimate would be closer to 3500 – 4000 calories for the whole recipe, meaning only about 63 calories per pretzel bite, assuming u made 60 bites. I have an app on my iPad for calories and the like, and it’s very accurate.

        Really? Hmmmm, they were hard to estimate due to the dipping chocolate and pretzel variables. I will lower the total. Good thing it says, “estimate!” We’ll just assume the best, haha.

    I am planning to make these for my sister’s upcoming bridal shower. This will be great. I’m wondering, how far in advance can I make them? Can I make them and freeze them? Or will they keep in the fridge for a week? Thanks for the great recipe.

      I really, truly think they would be just fine in the freezer or fridge after a week as long as they were stored in air-tight container, but can’t say 100% since I’ve never tried it. Good luck and enjoy!!

      I have successfully kept ‘buckeyes’ which is basically same recipe p-nut butter, powdered sugar, vanilla, butter…dipped in choc for a month in air tight container in fridge….I don’t think it will be a problem….I wouldn’t store in freezer….

      I made these a few weeks ago and kept them in the fridge for about 1 week, they honestly didn’t last longer because we ate them but 1 week worked. They are very soft if not in the fridge so I would actually recommend storing in the fridge to maintain structure.

    Made it with my preschoolers and husband this afternoon and it was a huge hit. Was tight on time so subbed in honey/maple syrup for the confectioner’s sugar and brown sugar. My youngest couldn’t stop eating the peanut butter mixture straight but I recommend it highly as a family cooking project!

    I made these tonight and they are so so so good. I think I ate half the peanut butter ‘batter’ before I could even put it between the pretzels. Who knew that brown sugar, powdered sugar, butter, and PB mixed together would be such a heavenly combination?! Not to mention adding the pretzel and chocolate! I will be bringing these to every event in the future! Easy to make and oh so delicious.

      I noticed that someone put maple/pancake syrup in instead of confectioner powder. If you are diabetic or watching calories, instead of the sugars use sugar free pancake syrup and dip in melted sugar free chocolate chips which are really good!

    I made these for my fiance for Father’s Day and he loved them. I loved them! One great thing is that they are NO BAKE! I didn’t realize until I got into the recipe. I didn’t even have to turn my oven on. Yay! Also, I tried using natural peanut butter and I wouldn’t suggest it because it was super sticky. Probably go with the kind I don’t have to stir next time. GREAT RECIPE!

    I just found this recipe and made them up for a brunch I’m hosting tomorrow. I used a Tbsp cookie scoop and divided each scoop into 4 little balls. With this measurement, there are around 105 sandwiches. Thanks for the recipe. Can’t wait to serve them so they won’t be in my house for me to eat. 😀

    This is such a delicious idea! I was actually looking for something to make to bring to a game night tonight when I found this. It is very easy and low cost. The only thing I recommend is getting a friend to help, because making them gets a little tedious. I almost doubled the recipe, but I’m glad I didn’t bc the single recipe made 75 for me!     I ended up using about a cup of extra powdered sugar – I just could NOT get mine to ball-rolling consistency. But once I got that figured out it was smooth sailing and I have a batch in the freezer. I don’t know how I’m going avoid eating all of the myself 🙂

    I just so happen to have half a bag of pretzels leftover from a little party we had last week so these will be great to make up. I’ve always loved buckeye balls but sometimes they can be SO sweet–these look perfect because the salty balances out the sweet. Can’t wait to try them–yum!

    Hi! I have these setting in the freezer right now! So excited!! In the batch that did not fit on the tray (about 10) that were on their own plate, I added a bit of sea salt on top on the chocolate. Well see if it was a good decision or not! Thanks for sharing!

    Just made these and dipped them in white chocolate because that’s what I had on hand. It made 76 sandwiches. I used the smallest Pampered Chef scoop and then cut each of those balls in half. Easy and delicious! Will definitely be making these again as my family and I all love sweet/salty combinations. Thanks for the great recipe!

    Yummy! I made this it’s sooo good!! We only had mini pretzel sticks and we had no chocolate chips, so we dipped the pretzels in this heavenly deliciousness then covered in a little bit of Nutella. It was SO good! Do you know how I would be able to cut this mixture so I have just enough for me? I am in the mood for some right now but I only want like one serving.

    I am thinking about a twist on this…..what if you were to crush up the pretzels, roll the balls in them, an then dip either halfway or all the way in the chocolate. It would be kind of like a fererro rocher…only cheaper! 🙂

    I mistakenly used granulated sugar instead of powdered…the granules would be there anyway with the brown sugar, right? The mixture still tastes delicious!
