oreo stuffed chocolate chip cookies

More cookies!  Don’t worry, I’ll change it up next week when I’ve got a birthday, can’t wait to try a new cake recipe.  (Haven’t decided on one yet, so I’m open to any ideas!!)

But as for these, I’d been drooling as I watched them circulate the blogosphere for months!  Couldn’t wait to try them, but I had to get my hands on some double stuff Oreos first.   You know, I’m not a big fan of the plain, ol’ Oreo cookie (there are so many other things I’d rather have for the calories), but when they are paired with something else, magic happens.  Bring on the Oreo cheesecake, the Oreo dirt dessert, and of course the cookies-n-cream ice cream  and shakes.   See?  Magic!!

I finally got to make these to share at my boys’ cub scout meeting.  (They just started and they are all so cute by the way.  What a great excuse for me to try a new recipe every week!) I knew they’d be so fun for kids, and who else could handle this much sugar than a bunch of high energy 8-10 year old boys?  Needless to say, they were a hit.

Also, just wanna mention how fabulous this chocolate chip cookie recipe is.  In fact, this stuffed version was a lot of fun, especially to share with kids, but I enjoy one of these plain chocolate chip cookies just as much, especially with a tall glass of milk.  Very close second to our absolute favorite of all time, the NY Times chocolate chipper, but MUCH less time and effort.

Oreo Stuffed Chocolate Chip Cookies

Original recipe courtesy Picky Palate

Yields about 18 very large cookies

(Calorie estimate: 395/cookie, but it’s literally like 3 cookies in one!)

2 sticks softened butter

3/4 Cup packed light brown sugar

1 Cup granulated sugar

2 large eggs

1 Tablespoon pure vanilla

3 1/2 Cups all purpose flour

1 teaspoon salt

1 teaspoon baking soda

10 oz bag chocolate chips

1 bag Oreo Cookies (definitely use double stuff )

Preheat oven to 350 degrees F.   In a stand or electric mixer cream butter and sugars until well combined.  Add in eggs and vanilla until well combined.

In a separate bowl mix the flour, salt and baking soda.  Slowly add to wet ingredients along with chocolate chips until just combined.  Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie.  Take another scoop of dough and place on bottom of Oreo Cookie.  Seal edges together by pressing and cupping in hand until Oreo Cookie is enclosed with dough.  Place onto a parchment or silpat lined baking sheet and bake cookies 9-13 minutes or until cookies are baked to your liking.  Let cool for 5 minutes before transferring to cooling rack.

    these look awesome. i just made chocolate rolo-stuffed cookies, and they were yummy too. seems like stuffing good things inside other good things makes for good eating. i’m still waiting for pictures of the house. checking my email hourly, but to no avail. also, we might be headed out to the east coast in april. so don’t plan some big trip and not be around.

    I just finished making these (and eating my first one!), and they are soooo good!! I’m delighted with how easy they were to make; I will definately be making these often! 😀
